Tostada with no additives spicy salsa

Tostadas De Pavo

Ingredients

Tostadas (crispy tortillas)
Vegetable oil for frying
6-8 corn tortillas

Refried Beans

1 can black refried beans
¼ cup chicken or vegetable stock
2 tablespoons olive oil
¼ cup diced yellow onion
1 teaspoon ground cumin
1 teaspoon ground coriander
¼ teaspoon salt & pepper

Pavo A la Mexicana (Ground Turkey)
1lb ground turkey
½ diced yellow onion
2 diced roman tomatoes
¼ cup chopped cilantro
½ cup chicken or vegetable stock
1 ¾ tsp salt & pepper
½ tsp garlic powder
½ tsp better than bouillon
3 tsp salsa @La Toxica

Other Toppings
Refried beans – warmed on the stove
½ head iceberg lettuce, cored and shredded
1 cup Queso fresco
Guacamole Crema (sour cream)

Tostada time


Pour the oil for frying into a large heavy-bottomed pot to a depth of about 2 inches. Place over medium heat and heat to 375 degrees F. Add the tortillas, one at a time, and fry until golden brown and crispy, about 1 1/2 minutes. Using tongs, transfer to a paper towel-lined pan and sprinkle with salt. Set aside.



Ground Turkey – A La Mexicana


Heat 2 tablespoons of oil in a large skillet over medium heat. Cook the diced yellow onion 2-5 minutes, or until the onions turn translucent. Add 1 additional tablespoon of oil, along with the ground turkey and your spices. Cook until the meat is opaque. When the turkey is cooked, stir in the diced tomatoes 2-4 minutes. Add your stock of choice and cover with lid. After the ground turkey has simmered for 5-7 minutes stir in your salsa and Cilantro. Set aside.



Frijole time


Heat the oil in a pan over medium-high heat. Add the onion, coriander, and cumin and cook, stirring, until lightly browned, about 2 minutes. Add the garlic and cook, until lightly browned, about 1 minute more. Add the beans, stock, and cook, stirring frequently, until thick about 4-6 minutes. Stir in the salt and season with pepper to taste.



Assembling


Spread the beans evenly over one side of each tortilla. Evenly mound the ground turkey on each tortilla and top with the lettuce, queso fresco, guacamole, sour cream and salsa.
