Chilaquiles Rojos with fresh salsa

Chilaquiles

Ingredients

I Cups salsa
2 Tbsp olive oil
3 Cups - favorite tortilla chips
¼ Diced red onion (for topping)
2 Eggs (optional)
1 Avocado, cubed queso fresco
Crema (sour cream)

Add 2 tablespoons of oil to the pan, bring to medium heat. Add your 2 cups of salsa to the pan. You want to flash fry the salsa for 3-5 minutes.

Add the tortilla chips to the pan. Stir the salsa and chips together as gently as possible. The goal is to coat the chips with la salsa.

Cook until the tortilla chips are heated through, about 3-5 minutes. Do not over soak your chips, you want your tortilla chips to still have a crunch to them in their final form. Taste and season with salt and/or pepper as needed.

Garnish with your fav 0ueso fresco, diced onion, crema y avocado


Sauce it up


If you want your chilaquiles to be extra saucy add ¼ cup of broth into la salsa. Allow for the salsa to come to a soft boil 3-5min before adding the chips.
